      A yam bean is a tropical and subtropical climbing plant belonging to the Fabaceae (pea) family. It is mainly cultivated for its edible tuberous roots which are tender, crisp, sweet and rich in carbohydrates and vitamin C. There are several varieties of yam bean, including jicama, Mexican yam bean, and Chinese potato. The part above ground, including leaves, flowers, and pods, are toxic and should not be consumed.
