Moistened raisins before mixing into a batter or dough to prevent the raisin from grabbing moisture from the mixture or baked product, making the baked product crumbly. How to condition raisins - Cover raisins in tap water (80? F.) for 5 to 10 minutes; drain off water. Measure raisins needed; place remainder in sealable food container or bag. Store refrigerated.
