Fresh off the tree, ababai has a thin skin and looks like a small papaya with a flesh that is firm and uniform in texture. It is one of the few fruits that will not dissolve when cooked. It can be sauteed with vegetables, broiled or grilled. Ababai is never eaten fresh due to its high enzyme content. After processing, the pale yellow color turns a brilliant gold.
