Sinapine

An alkaloid occuring in the seeds of mustard. It is extracted,in combination with sulphocyanic acid, as a white crystallinesubstance, having a hot, bitter taste. When sinapine is isolated itis unstable and undergoes decomposition.

Sinapine is an alkaloidal amine found in some seeds, particularly oil seeds of plants in the family Brassicaceae. It is the choline ester of sinapic acid.

[Kit]

It has a role as a photosynthetic electron-transport chain inhibitor, an antioxidant and a plant metabolite. It is functionally related to a trans-sinapic acid.
